Kerala Style Coconut Chutney

I have to say Hats off to the bloggers who blog daily with out fail. When I decided to blog continuously for a month with the exception of Saturday/Sundays, little did I know that it will be so hard!! All of a sudden unexpected activities are keeping me too much busy that I am hardly finding time to cook!! but still I am gonna try my best not to break my so called resolution :) Today I am posting a very simple recipe of Kerala Style Coconut Chutney.  



I didnt plan to blog coconut chutney today. In fact I had kept several other options in my mind for cooking. but the day turned out to be unusually busy... Whew... And what a day it was!! Woke up late, almost missed talking to my mom on skype, started off cooking, thinking of making Tuna Biryani and then found that I couldnt open my canned tuna how ever hard I try and then leaving it off and converting to a veg biryani at the last minute, then running off to keep an appointment where my hubby turning up late due to his work, tempers running high as we rush for the appointment, then again hurrying back home as my hubby had to go back for work and he literally gulped down the lunch in 3 - 4 spoons!!! Had already promised to visit my friend in the afternoon, found that she was not at home, returned home, thought of cooking something to blog and then found surprise guests with 2 kids. Home turned upside down by kids, cleaned it all up, didnt have mood to cook after that, thought of relaxing for a while, ended up watching a movie fast paced because I had to go off meeting my friend in a short while from then. Yes, Another appointment :) Went off to meet her, found her busy, went off for a walk and then came back and visited my friend, came back home, started cooking dinner and ended up depressed because I hadnt cooked anything to blog and day light was almost gone. Then suddenly paying attention to what I was cooking which was Idli and coconut chutney, I thought hey.. I never blogged my recipe for coconut chutney which I got from my mil. All of a sudden, found interest in what I was cooking almost automatically and so here I am with a typical Kerala style Coconut chutney and managing not to break my resolution at the end of the day!!! 




Kerala style Coconut Chutney:

Prep Time: 5 min
Cook Time: 10 min
Total Time: 10 - 15 min

Ingredients: (for 2 people)

1 cup grated Coconut
3 - 4 shallots
1 inch ginger
1 Tbsp Cumin seeds
1/2 of a green chilly as mine is very spicy. (Please add as per the spiciness of the ones you buy)
Salt
1 Tbsp Oil (Best is Coconut oil for authentic taste)
1 Tbsp Mustard seeds
4 - 5 Curry Leaves
2 - 3 dry red chillies

Prepping:

Step 1: Grate Coconut.
Step 2: Cut shallots, ginger and green chilly.

Method of Preparing:

Step 1:

Grind coconut, green chilly, shallots, ginger, cumin seeds and salt by adding water to a smooth paste. Adjust water as per the consistency that you need. 

Step 2: 

Heat oil in a pan. When the oil becomes hot, add mustard seeds. Once they crackle, add dry read chillies and curry leaves. Stir for a few sec and then add the ground paste to the pan. Adjust salt if required after tasting and switch off after a minute. 

Serve with Idlis, dosas or vadas.
